Recipe – Yellow Courgette & Wild Onion Soup

Our tasty seasonal soup from last week – yellow courgette and wild onion. We’re so seasonal that it’s already off our menu to make way for a new soup – carrot and beech coriander soup. But now you can make this yourself at home instead!

 

INGREDIENTS

1 kilo yellow courgettes

2 small onions

½ a leek

2 cloves of garlic

2 sprigs of thyme

50g butter

50ml double cream

Salt & pepper to taste

 

METHOD

In a very hot pan fry off all ingredients except the courgettes and cream

Stir for 2 mins

Add courgettes and double cream

Stir fir another 2 mins

Add water or vegetable stock to level with the mixture

Bring to the boil

Cook for 4 mins

Blend carefully as mixture will be very hot!
